Doodh ki Sabji (Milk Curry)!!

Onmyplate today is a curry which was discovered when suddenly few of my friends visited my place. They wanted to have something new and I thought of many things but finally I came up with an idea of making curry with milk and this dish indeed saved me from being embarrassed as it is easy to cook, good in taste, healthy and beautiful to look at 🙂

Here goes the recipe for Doodh ki sabji (Milk Curry)!!

Ingredients::

  • Full cream Milk 1 L
  • Onion 1 chopped
  • Tomato 1 chopped
  • Zeera (Cumin) seeds 1/2 tsp
  • Garam Masala 1/4 tsp
  • Haldi (Turmeric) 1/4 tsp
  • Red chili powder 1/4 tsp
  • Fresh green chili 1 chopped
  • Chhoti Elachi (cardamom) 2 crushed
  • Cinnamon crushed 2 half inches
  • Salt according to taste
  • Oil 2 tbsp
  • Ghee (Clarified butter) 1 tbsp

Preparation::

  • Heat oil in a fry pan and add zeera seeds
  • Once the seeds crackle add fresh green chili and onion
  • Fry the onions in low heat till golden brown in color
  • Add tomatoes, haldi, red chili powder, salt, garam masala and stir
  • Now fry the mixture in low heat till the tomatoes are soft
  • Add milk and let it simmer for 4-5 minutes in medium heat
  • Keep stirring so that the milk doesn’t stick to the bottom of the fry pan
  • Increase the flame to hgh and fry the mixture till the milk dries up
  • Lower the flame; add the crushed cinnamon, chhoti elaichi and ghee and mix well
  • Remove from heat and serve hot with parathas!!



Crunchy Fruit & Toast Custard Delight!!

Here goes the recipe for Crunchy Fruit & Toast Custard Delight!!

Ingredients::

  • Milk 500 ml
  • Custard Powder 2 tbsp
  • Pomegranate 1/4 cup
  • Banana 1 small cut into rings
  • Sugar 3-4 tbsp or according to taste
  • Cashew 15-20 pieces chopped
  • Almonds 8-10 finely cut width wise
  • Bread slice 2 cut into squares of 2 inches ( sides removed)
  • Oil for deep fry

Preparation::

  • Take 1/4 cup hot milk and add custard powder and make a smooth paste
  • Now boil the remaining milk and remove from heat
  • Add the custard paste into the milk and stir
  • Heat it in low flame and cook for 2-3 minutes
  • Keep stirring so that the paste doesn’t stick to the bottom of the vessel
  • Remove from heat and let it cool
  • Now add the dry fruits, pomegranate and banana and mix well
  • Refrigerate it for 1-2 hrs
  • In the meanwhile heat oil in a deep fry pan
  • Take the bread pieces and deep fry in low flame till golden brown in color
  • Cut the pieces further into small squares and refrigerate it for 30 minutes
  • Now take a serving cup and layer 6-7 crunchy bread pieces and then top it with custard delight
  • Serve chilled!!

Chawal ki Kheer (Rice Pudding)

Chawal (Rice) is an essential part of food which is used all over India. This food is rich in starch and an excellent source of energy. Various food items are made using chawal in India and one of them is ‘Kheer’ which is an excellent desert prepared almost all over the country in any special occasion!!

Today’s special is ‘Chawal ki Kheer’ and here goes the recipe for the same;

Ingredients::

Milk full cream 1 L
Basmati Chawal 1 1/2 tbsp
Sugar 8-9 tbsp or according to taste
Cashew 7-8 cut into small pieces
Kismis (raisins) 6-7 pieces
Almonds 7-8 cut into small pieces width wise
Pista 1 tbsp cut into two halves (optional)
Kesar (saffron) strands 4-5 dissolved in warm milk (optional)
Chhoti Elaichi (cardamom) 2-3 pieces crushed

Preparation::

Take a pan and boil milk
Once the milk is boiled lower the heat and add rice
Mix well and simmer for 15-20 minutes, while stirring continuously so that the milk doesn’t stick to the vessel
Check if the rice is soft and then add cashew, almonds, kismis, pista, kesar and chhoti elaichi and mix well
When the kheer becomes thick add sugar
Stir for 1-2 minutes and remove from heat
Allow it to cool and refrigerate till 1-2 hrs
Serve chilled!!

Besan ki Barfi

Besan is a blended form of chana dal which is widely used in India since it is not only a rich source of protein and highly nutritious but also easy to digest!!

It is useful in making many vegetarian & non-vegetarian food items as well as deserts.

Today’s special is Besan ki Barfi……

Inredients::

Besan 1 cup
Milk 1 cup
Ghee 1 cup
Sugar 1 cup or according to taste
Cashew 10-15 pieces chopped
Kismis (raisins) 8-10
Almonds 5-6 small pieces cut width wise
Chhoti Elaichi (cardamom) 5-6 pieces crushed

Preparation::

In a mixing bowl add besan, sugar, cashew, kismis, almonds and chhoti elaichi
Mix well and add milk
Whisk it properly so that it turns into a smooth paste
Heat ghee in a pan
Add the paste and cook in a low heat
Keep stirring so that it doesn’t stick to the bottom of the pan
In 10-15 minutes you would see the color turning into light brown
Once the lump is formed in the center of the pan remove it from heat
Now spread the lump on a greased plate and make the upper surface smooth
Let it cool and cut into diamond or square shapes

For best result refrigerate it for 20-30 minutes and serve!!

Cold Coffee with Ice-cream

Today’s special is a drink and believe me it’s liked by all the age group. This is one of the best ways for in taking Milk since many of us do not want to have it as we grow older but it is vital and essential for our healthy bones as well as for developing strong immune system.

It’s easy to prepare at home, tasty and in no time you will win accolades from your friends and family!!

So here goes the recipe for ‘Cold Coffee’………..

Ingredients::

Full cream Milk ½ L chilled
Sugar 2 tbsp or according to taste
Coffee 2 tsp or according to taste
Crushed Ice ½ cup
Vanilla/Chocolate ice-cream 2 scoops for each glass
Coffee powder or grated chocolate to garnish

Preparation::

Take milk, sugar, crushed ice and coffee into a blender jar and blend until mixed well and frothy
Pour into the glass and add ice cream of your choice or you may even churn the ice-creams for both chocolaty and vanilla taste

Garnish with coffee powder or grated chocolate and serve immediately before the ice-cream melts!!

Apple Halwa

Apple is one of the best fruits and therefore there is a famous saying “An apple a day keeps the doctor away”.

Apart from being delicious and crunchy fruit it contains variety of antioxidants and essential nutrients which is required for good health.

Today’s Special Recipe “Apple Halwa” is not only tasty and healthy but also children’s favorite!!

Ingredients::

  • Apples 2 medium, boiled and mashed
  • Milk 1 L
  • Sugar 2 ½ tbsp or according to taste
  • Dry Fruits 2 tbsp
  • Ghee 1 ½ tbsp
  • Chhoti Elaichi (Cardamom) a pinch

Preparation::

  • Heat ghee in kadhai and add mashed apples
  • Fry in low heat till the color is golden brown
  • Now add milk and stir it frequently so that it doesn’t stick on the bottom of kadhai.
  • Fry in medium heat till the milk is completely absorbed and mixed in apple
  • When the milk dries up and turns into a thick paste then you may add sugar and keep in low heat
  • Add dry fruits and chhoti elaichi and remove from heat
  • Garnish with remaining dry fruits and serve hot!!
